Abstract:
We collected 16 sashimi samples from 4 different cuisine stores in Suzhou, using DNA barcoding to identify 4 common sashimi which are salmon, tuna, sweet shrimp and arctic shellfish to see whether there exist food fraud. After comparing the result of DNA sequence of RZT-002 (tuna) to five common tunas that are generally used as sashimi, we found that the name of the tuna labeled by sellers are matched with its actual variety.
